
Single-Bite Shrimp Scampi

When I’m hosting a relaxing girls’ night in, one of my favorite recipes is single-bite shrimp scampi (paired with Callie Collection Pinot Grigio of course). It’s so easy to make and is always a crowd pleaser!

Ingredients
¼ cup olive oil
1 large lemon, zested and juiced
6 cloves garlic, roasted
15 large shrimp
1 large lemon, cut into wedges
¼ cup fresh parsley, chopped
5 leaves chopped basil
Lemon pepper
Instructions

In a medium-sized bowl, whisk together oil, lemon peel, lemon juice, and roasted garlic. Remove 2 tablespoons marinade to a small bowl; set aside.

Place shrimp in medium-sized bowl and toss in marinade. Scatter lemon wedges and shrimp in a sauce pan.

Cook shrimp until opaque, about 3 minutes, turning once. Once the shrimp is done cooking, brush with remaining marinade.

Serve on an attractive dish and sprinkle with chopped parsley and basil.
